French Toast Casserole

Ingredients

  • 1 loaf (about 16 oz / 450 g) brioche or challah bread, cut into 1-inch cubes
  • 8 large eggs
  • 2 cups (480 ml) whole milk
  • ½ cup (120 ml) heavy cream
  • ⅓ cup pure maple syrup
  • ¼ cup brown sugar
  • 2 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Optional Toppings

  • Chopped pecans or walnuts
  • Fresh berries
  • Powdered sugar
  • Additional maple syrup for serving

Before you get started

For the best texture, use day-old brioche or challah bread, which absorbs the custard without becoming soggy. You can prepare the casserole the night before and refrigerate it overnight for even richer flavor, making it perfect for holidays, brunches, or weekend breakfasts.

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. Arrange the cubed bread evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, maple syrup, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Pour the custard evenly over the bread, gently pressing the bread down so it absorbs the mixture.
  5. Cover and refrigerate for at least 30 minutes, or preferably overnight.
  6. Preheat the oven to 350°F (175°C).
  7. If using, sprinkle chopped pecans or walnuts over the top.
  8. Bake uncovered for 40–45 minutes, until the center is set and the top is golden brown.
  9. Let the casserole rest for 10 minutes before serving.
  10. Dust with powdered sugar and drizzle with warm maple syrup. Top with fresh berries if desired.

  • Add diced apples or sliced bananas before baking for extra sweetness.
