Maple Berry Pancake

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 large egg
  • ¾ cup milk
  • 2 tablespoons melted butter
  • ½ teaspoon vanilla extract
  • ½ cup fresh berries
  • 1 banana, sliced
  • Pure maple syrup, for serving

Before you get started

Prepare and measure all your ingredients before heating the pan. Use a non-stick skillet or lightly grease the cooking surface with butter. For soft and fluffy pancakes, avoid overmixing the batter. A few small lumps are perfectly fine.

Wash and dry the berries, slice the banana and warm the maple syrup slightly before serving.

  • In a large bowl, combine the flour, baking powder and sugar.
  • In a separate bowl, whisk together the egg, milk, melted butter and vanilla extract.
  • Pour the wet ingredients into the dry ingredients.
  • Stir gently until everything is just combined. Do not overmix the batter.
  • Heat a lightly buttered skillet over medium heat.
  • Pour approximately ¼ cup of batter into the skillet for each pancake.
  • Cook for 2 to 3 minutes, or until bubbles begin to form on the surface.
  • Flip the pancake and cook for another 1 to 2 minutes, until golden brown.
  • Repeat with the remaining batter.
  • Stack the pancakes on a plate and garnish with fresh berries and banana slices.
  • Drizzle generously with pure maple syrup and serve immediately.
